Seasoned Chicken with Mashed Potatoes and Veggies

I saw a post about mashed potatoes and I thought of making one myself. It was fun. I really enjoyed it. The recipe suggested olive oil but I just used water plus garlic cloves.


The boiled potatoes were later seasoned with salt and pepper. Minced chives were also added.


The boneless chicken breasts seasoned with salt and pepper were cooked in medium heat using soybean oil. Each piece had my full attention because I didn't want to overcook them.


I've always been cautious when using oil because I used to get burns while doing it. My mother also keeps on reminding me to avoid using oil as much as possible. The rest of the vegetables were cooked using butter seasoned with garlic, onions, and soy sauce.

I added some lime to the tomato juice for the sauce and sprinkled the chicken with minced chives.
