Cream Cheese Flan Without an Electric Mixer

I try to bake a flan that is not too complicated and does not require a steamer. I first learned to make leche flan using a steamer. Glad to know that one does not need to have a steamer to make a flan. A water bath and an oven are enough. The only problem is there is no electric mixer. Glad we have a blender!


Yes, you can use a blender to mix ingredients. Just adjust the speed to either high or low depending on what you want to achieve. With this flan, I set it to low to mix one package of cream cheese, one can of evaporated milk, one can of condensed milk, and five eggs until they are well-blended. I got the recipe online from

Before mixing the rest of the ingredients in a blender, 8 tablespoons of brown granulated sugar are heated first in a pan to caramelize and then set aside to cool.


Pour the mixture from the blender into the pan with caramel. Put the pan in a water bath before putting it in the oven. Bake it for 50 minutes at 400°F (200°C). You can cover the pan with aluminum foil before baking. Don't worry if you don't have foil. I forgot to cover the pan the second time I made the flan. The result was the same in terms of texture and taste. Perhaps the difference was just not that obvious.

Let the flan cool down after removing it from the oven. Then put it in the fridge to chill. I usually leave it there overnight. Invert it so the caramelized side is on top.
